A guest's relationship with your hotel begins long before they step through your doors, and extends far beyond checkout. Understanding the hotel customer journey is foundational to being competitive in the hospitality industry.

This article maps out the hotel customer journey, from booking to check-out. We also take a look at how guest journey mapping has changed, the key trends shaping the guest experience, and how bespoke guest experiences are crafted.

Hero image brief: close-up of fresh flower arrangement at hotel desk/in room

What is a Hotel Customer Journey?

The hotel customer journey is a series of interactions between the guest and the hotel. The journey begins long before they check in at a property, when the guest is still grappling with abstract plans of travel.

The different phases of the hotel customer journey map include:

Inspiration

Research and booking

Check-in

In-stay guest experience

Check-out and post-stay

This journey has evolved dramatically in recent years due to evolving guest preferences. Travelers today increasingly expect personalized and seamless stays.

Infographic: Hotel customer journey map showing the 5 stages of the hotel customer journey (requested 23.2.)

Mapping out the customer journey is an integral step for understanding the different points of contact you have with the guest. The idea is to see your offerings through the guest’s eyes, as each touch point is an opportunity for enhancing the guest experience.

The goal of guest journey mapping is to have visitors leave satisfied with their stay, who ultimately return to the property.

Macro Trends Affecting the Hotel Customer Journey

McKinsey names service excellence as the ‘most powerful differentiator’ of the service sector. There is, in general, a shift towards an experience economy, and the spending on goods has stagnated in growth.

For the hotel guest experience journey, this means that guests are mainly attracted to the experiential facets of the hotel stay. Surely, the physical assets such as interiors and design have a great impact on the atmosphere of the hotel, but so does the intangible factor of great service, if not even more so.

This shift showcases the increasing importance of investing in the hotel customer journey.

The Rise of Seamless Tech-Enabled Experiences

Technology has fundamentally changed what guests expect in terms of the seamlessness of their stays. Self-service technology is especially changing the different stages of the customer journey, and something travelers increasingly demand, with 73% of guests preferring hotels that integrate it.

For the guest experience, this means fewer human touch points and more autonomy, but it can simultaneously reduce the hotel’s control of the customer journey.

Personalization is the New Standard

Personalization has been shown to have a positive impact on reputation and repeat business, another facet tech increasingly plays a part in

Far from a nice-to-have, personalization should be an integral part and guiding principle of the hotel guest experience journey, as it has become a baseline expectation for consumers. According to McKinsey, 71% expect personalization, while 76% of consumers get frustrated when it cannot be found, consequently having a negative impact on guest satisfaction.

The Five Stages of the Hotel Customer Journey Map

What the hotel customer journey map looks like has changed significantly in the past decade, and continues to do so, with evolving tech and guest expectations affecting each step.

In this section, we will examine the five stages of the hotel customer journey from a perspective that accounts for these significant changes.

Inspiration: Social Media and AI are Replacing Traditional Search Engines

Just recently, the hotel customer journey started with a visit to a search engine. However, that Google search has now been replaced with a scroll.

More and more travelers discover their next destination through serendipitous social media encounters, as the inspiration phase has migrated almost entirely to visual platforms such as TikTok and Instagram.

TikTok is a particularly strong source of travel inspiration for younger Gen Z consumers, as the platform’s short-form content creates visceral emotional responses that far outweigh results from traditional search engines.

Image brief: traveler scrolling through TikTok/Instagram on phone, hotel imagery visible on screen

AI is the next seismic shift affecting all stages of the hotel customer journey. 39% of active U.S. travelers are already using AI for travel, while the use of traditional search engines has plummeted from 52% in late 2024 to 36% in the second half of 2025, with a continuing declining trend.

Moving forward, AI has the potential to collapse the inspiration stage entirely, as it can handle all stages from discovering properties to booking decision.

Research and Booking: From Comparison to Conversion

The research and booking phase begins once inspiration has struck, and today, it involves offer comparison and toggling between multiple platforms. In finding the right property, guests factor in:

Pricing: comparison between multiple platforms

Reviews: ratings and reviews on TripAdvisor, Google, platforms like Reddit, and online travel agencies (OTAs)

Location: proximity to attractions and transport

Amenities: parking, Wi-Fi, breakfast, spa, fitness, and wellness facilities

Loyalty benefits: points, upgrades, and exclusive perks for direct bookings

Cancellation policies: flexibility for changes and refunds

Photos: visual verification of rooms and facilities

Currently, OTAs capture approximately 55% of the hotel booking market. They have gained their dominance through offering convenience and competitive pricing for guests. The drawback for hoteliers is the high commissions that the platforms charge on each booking, which squeeze profit margins.

Image brief: multiple tabs open on laptop/booking site open. Alternatively, a person with a laptop.

According to Skift, this dynamic is shifting, with trend lines pointing towards direct digital channels bypassing OTAs by 2030. The change follows from hotels' refocusing their marketing efforts in an attempt to reduce their reliance on intermediaries.

In Europe, for instance, direct bookings have increased 8-15% year-over-year, while Booking.com's share has declined 5-12 percentage points in the same period.

However, the direction the booking journey will take is largely determined by AI and how hotel bookings will be integrated. Booking.com and Expedia are now both integrated into ChatGPT following OpenAI’s commerce platform launch, which could tip the power balance further to the OTA court.

OTAs and direct channels do not have to be opposing forces, as they can both be part of an efficient, omnichannel distribution strategy. The more pressing question for hoteliers is how to ensure visibility on AI platforms to capture the growing segment of AI-native travelers.

Check-In: the First Impression

The first physical touch point of the hotel customer journey is the check-in. The traditional interaction with a staff member is increasingly replaced by options such as mobile check-in and self-service kiosks in the lobby, especially in lean and limited-service concepts that aim to free staff time.

Image brief: self-service kiosks in hotel lobby

New solutions such as mobile keys bring about higher guest satisfaction, also translating into higher retention. Seamless tech experiences can double the likelihood of a guest returning to a property.

Despite the enthusiasm for automation, guests still often want the option of interacting with a staff member in case of questions, special requests, or just some good old human connection.

The In-Stay Guest Experience: Fulfilling Service Promises

Image brief: immersive and well-designed hotel environment, e.g., a cool bar or pool area

The in-stay phase is where hotels either deliver on their marketed promises or lose guests forever. It is the longest phase of the hotel customer journey, as it encompasses everything between check-in and check-out.

According to EHL's Hospitality Outlook 2026, consumers increasingly prioritize travel, wellness, and social events over material goods, leading to a growing demand for immersive guest experiences.

VALENTINA QUOTE

Immersion can be achieved in many ways, from personalization to gamifying the guest experience. Again, AI can be leveraged for tailoring upselling offers for each guest or for serving as the first line of contact in case of any queries.

Mobile messaging, for instance, in the form of WhatsApp integration, is replacing the front desk phone, allowing hotels to meet guests where they are. Options like this can significantly improve response times compared to traditional phone calls, consequently improving guest satisfaction.

Highlighting the entirety of the property’s offering during the in-stay is important, as hotels that prioritize ancillary revenue streams see up to 30% higher profitability compared to those that don't. Furthermore, hotels that use automated upselling strategies see an average increase of 20-30% in ancillary revenue per guest.

Service during the in-stay experience should be anticipatory and proactive. If the vibe is one of putting out fires as they occur, it will not go unnoticed by the guest. Actively collecting and reviewing guest feedback is step number one and should always be followed by resolution as quickly as possible.

The optimal in-stay guest experience is created by striking a human-tech balance that allows guests to immerse themselves in their stay.

Check-Out and Post-Stay: Don’t Leave Your Guests Hanging

While the first impression is important, so is the last. What happens in the final moments of a guest’s stay and the days that follow can make the difference between a one-time guest and someone who becomes a lifelong advocate.

The guest journey does not end at departure, and the final touch point should not be reduced to a transaction. Like the check-in, the checkout process should be made simple and frictionless.

Post-stay is also when travelers turn to review their experience, which feeds right back into the loop of 81% of travelers who always or frequently read reviews before booking. Moreover, 93% consult reviews as their most trusted information source. A single point increase has a direct impact on revenue and ADR.

Like during the in-stay experience, reviews and feedback received after the fact should always be acted on. Guest feedback systems can collect Net Promoter Scores and other feedback for operational improvements, and create funnels for positive and negative reviews, with high satisfaction scores leading to public review platforms and lower ones to internal feedback channels.

Furthermore, post-stay communications should not become spam. Thanking guests for their stay or offering repeat booking incentives can be great strategies for converting guests into return visitors.

Growing the pool of repeat guests should be a strategic priority, as the client acquisition cost is much lower and spend during stay is usually higher. Also, the word-of-mouth and positive testament these visitors share are much more impactful than any marketing budget can buy.

The checkout and post-stay phase should be treated as the bridge to the next journey by proper investment into seamlessness in the departure and proactive reputation management. Communications should nurture the relationship with the guests and incentivize them to become loyal advocates of the brand.

Designing a Hotel Customer Journey Map that Actually Works

The customer journey should be regularly reinvented. A guest experience journey should in no way be stagnant. There are always ways to bring an element of surprise or tap into something current happening in the surrounding community.

These small adjustments do not need to be major investments monetarily but can still bring immense value and wow-factor to the guest, paying the effort back manifold.

Hosting a pop-up for showcasing local art or setting up a crêpe stand in the lobby are details guests will keep discussing and sharing long after they have checked out. Even limited-service hotels can vamp up the guest experience.

Finnish hotel brand Bob W, which focuses on limited-service serviced apartments, equips guests with Polaroid cameras in the room to capture moments from their stay. Unexpected but truly memorable.

A great guest experience cannot coexist with constant pressure to optimize the bottom line. Especially with the evolution of AI, it is tempting to automate functions to save costs. However, this should never be done at the expense of the quality of service and customer interactions.

Short-sighted cost-benefit tradeoffs often backfire with a negative impact on the guest experience.

The Do's and Don'ts of Customer Journey Mapping

Do: Map the entire journey from the guest’s perspective. Walk through each stage as if you were the traveler. At which points is there friction? Where do you feel delighted? Guest feedback can be used to illuminate any pain points or wow-moments that you may have missed.

Do: Invest in the most impactful moments. Not all touch points are created equal, and resources should be focused disproportionately on the moments that affect guest perception the most, such as arrival, service recovery, and departure.

Don’t: Automate without strategic prioritization. Technology should be deployed where it eliminates friction, but not at the cost of human connection. Only the solutions that enhance hospitality, either directly by offering better personalization or indirectly through freeing up staff time for human connection, should make the cut.

Don’t: create a hotel customer journey map once and forget about it. Guest expectations evolve constantly, and currently possibly at a higher rate than ever. The innovative solutions of the early 2020’s, such as mobile keys and contactless check-in, are the baseline expectation for guests in 2026. Audit your guest journey regularly, also against competitor offerings.

Infographic: the do’s and don’ts of hotel customer journey mapping/ Best practices for designing effective hotel customer journey maps (requested 23.2.)

What Does the Future of the Hotel Customer Journey Look Like?

The hotel customer journey is evolving faster than at any point in the history of modern hospitality. The major trends of AI and increasing demand for seamlessness are already overhauling the status quo, and more are on the horizon.

Agentic AI Will Take a Greater Role

AI agents are already capable of handling complex tasks with multiple steps without human intervention.

In the travel industry, these systems can save hours of staff time through handling tasks like guest room allocation based on factors such as preferences and loyalty status. Another example is that predictive maintenance can significantly reduce rooms that are out of order.

The Immersive Experience Economy

As the experience economy further deepens, hotels will have to find more innovative ways to respond to the guest demand for immersion. For instance, properties are increasingly experimenting with gamification, where guests unlock rewards or discover hidden experiences throughout their stay.

Furthermore, a lot more emphasis will be placed on sensory design, where hotels have signature scents, soundscapes, and lighting in order to resonate with guests emotionally.

VALENTINA QUOTE

A successful hotel customer journey leaves guests with stories to tell about their stay and the unique moments they experienced at the property.

Regenerative Hospitality Makes Guests Active Participants

The hospitality industry, along many others, underwent a sustainability boom, both due to new regulatory requirements and guests’ raised standards. However, the language is often centered around minimizing or offsetting the environmental harm caused by the industry.

Regenerative hospitality makes creating positive impact its target, and hotels are reimagined as active participants of the ecosystems they are embedded in. A large part of the philosophy is making community well-being and cultural preservation central in core operations, which means that it will inevitably guide the guest journey.

Visitors are made active contributors in fulfilling the mission of regenerative hospitality as they, for instance, experience regional agriculture at their dinner table and wellness programs involving the local communities.

I believe that in the future, guests will increasingly choose properties based on the positive impact they have and how they can participate in it. The more authentic and local the hotel guest experience is, the better.

Crafting Hotel Customer Journeys that Create Lasting Impact

The hotel customer journey has changed from being a more or less linear path into a more dynamic experience. It starts long before the guest enters the property, when they are still finding inspiration (or rather, are passively offered some).

Whether physical or not, each touch point is an opportunity to create something memorable for the guest, creating a relationship and brand loyalty.

Today, a successful hotel guest experience strikes a balance between automation and human warmth that defines genuine hospitality. Personalization is the word of the moment, and tech can be a great enabler for it, but not the end-all-be-all.

Investments should be strategically made in the moments that affect guest perception the most, and refining the hotel customer journey should be an ongoing commitment. Guests can always recognize intentionality behind details, which is why every touch point deserves examination.

Customer Journey FAQs

The food and beverage manager role is one of hospitality’s most dynamic leadership positions. Defined by service excellence, team collaboration, and strategic business insight, F&B managers blend creativity with operational and commercial intelligence. They lead diverse teams to deliver exceptional dining experiences that delight guests and drive profitability.

With global travel, lifestyle dining, and luxury experiences on the rise, the hospitality sector is expanding rapidly. According to the U.S. Bureau of Labor Statistics (BLS), two-thirds of all new leisure and hospitality jobs through 2033 will be in the F&B sector, an increase of more than 545,000 jobs.

For those who thrive in fast-paced environments and enjoy leading people, the food and beverage manager role offers meaningful career growth, global mobility, and the opportunity to make a lasting impact every day.

Food and Beverage Manager Career Quick Facts

Job Title: Food and Beverage Manager (F&B Manager)

Definition: Oversees all dining, beverage, and catering operations within hospitality or restaurant settings, ensuring guest satisfaction, regulatory compliance, and strong financial performance

Average Salary (Global): USD 75,000 annually

Settings: Hotels, resorts, restaurants, cruise lines, event venues, and corporate food service

Schedule: Long or split shifts, including evenings, weekends, and holidays

What Is a Food and Beverage Manager?

A food and beverage manager leads both the strategic and day-to-day management of dining and beverage operations. Typically reporting to a general manager or director of operations, the role involves coordinating restaurant supervisors, chefs, sommeliers, and banquet teams.

A clear food and beverage manager job description includes operational oversight, budgeting, compliance, menu development, vendor management, and guest experience leadership. Their decisions shape both the quality of the dining experience and the financial performance of all outlets under their supervision.

Food and Beverage Manager Job Description: Duties & Responsibilities

The food and beverage manager's duties and responsibilities span several core areas and require strong leadership, financial awareness, and a commitment to service excellence and guest satisfaction in hospitality environments. These core food and beverage manager duties highlight why F&B leaders are essential to hotel and restaurant success.

Guest Experience

Maintain high service standards across restaurants, bars, lounges, and banquets

Manage guest feedback and resolve complaints promptly

Ensure brand consistency in menu presentation, ambiance, and service delivery

Leadership & People Management

Recruit, train, and mentor culinary and service staff

Foster a positive, inclusive workplace culture

Conduct performance reviews and implement training programs

Operations & Compliance

Oversee purchasing, inventory management, and vendor relationships

Ensure compliance with food safety, hygiene, and licensing laws

Implement cost-control measures and sustainability practices

Budgeting & Strategy

Prepare budgets, forecasts, and profit-and-loss statements

Monitor financial performance and adjust operations accordingly

Develop menus and promotions aligned with trends and brand goals

How to Become a Food and Beverage Manager

Most F&B managers grow their careers through a blend of hands-on operational experience, supervisory leadership, and formal hospitality training.

Here’s a version that mirrors the style of the other career guides — short, clear sentences in a clean paragraph-based structure:

Professional Experience

Entry-level experience usually begins in roles such as waiter, bartender, or commis chef or expediting. These positions build core service skills, operational awareness, and a strong understanding of guest expectations.

Mid-level roles like restaurant supervisor, banquet captain, or assistant F&B manager introduce team leadership, daily operations management, and foundational budgeting and cost-control responsibilities.

Hospitality education programs and internships can accelerate this progression by offering hands-on operational exposure and structured training in service, safety, and financial fundamentals, thereby reducing the need for certain entry-level positions.

Education Requirements

Most food and beverage managers hold a bachelor’s degree in hospitality management, culinary arts, or business administration. These programs build foundational knowledge in operations, leadership, finance, and service quality.

Professional certifications also strengthen a candidate’s profile. Common options include ServSafe Food Protection Manager and HACCP Level 2–3. Specialized diplomas or certificates in food and beverage management or hospitality leadership further support progression into supervisory and managerial roles

Is a College Degree Necessary?

Not strictly, but a degree accelerates career progression and opens access to leadership roles. F&B management relies on operational expertise, strategic planning, financial literacy, and safety compliance, all of which are strengthened through formal education or professional development.

Essential Food and Beverage Manager Skills

The combination of technical and interpersonal skills defines success in this role. Below are the essential hard and soft skills employers look for.

Hard Skills

Budgeting and cost control

POS and inventory management systems

Food safety, HACCP, and hygiene compliance

Menu engineering, pricing strategy, and concept development

Soft Skills

Leadership and team motivation

Communication and negotiation

Customer-centric thinking

Adaptability and crisis management

Tips for Career Changers

Many professionals successfully transition into F&B management.

If you come from a related field such as retail, events, tourism, culinary arts, or customer experience (CX) design, then you likely have transferable strengths (leadership, budgeting, guest service). Short courses in food safety, menu planning, or F&B management can complete the transition.

If you come from an unrelated field, then you’ll need to build hospitality fundamentals through training in food safety, service operations, cost control, and guest experience design. Internships or entry-level supervisory roles help build confidence.

Across all backgrounds, employers value a service mindset, leadership potential, and adaptability.

Networking & Career Growth

A strong network helps to accelerate career growth in food and beverage management. Effective strategies include:

Connecting with mentors and peers across restaurant and hotel F&B operations

Joining industry associations at the regional, national, and international levels

Attending trade fairs and conferences or regional F&B innovation events

Engaging with hospitality schools, training programs, and alumni networks for insights and opportunities.

These connections help build industry visibility, support continuous learning, and open pathways to multi-outlet management or regional F&B leadership roles.

Career Outlook for Food and Beverage Managers

The BLS (USA) projects 6% growth for lodging and restaurant management roles between 2022 and 2032, which is faster than average for management jobs. Growing travel demand, lifestyle dining concepts, and the expansion of luxury brands keep food and beverage manager responsibilities central to hotel success.

The role is becoming more strategic with emphasis on:

Culinary innovation

Sustainable sourcing and waste reduction

AI-driven ordering and menu analytics

Experience-focused dining as core brand identity

This career offers global mobility, entrepreneurial potential, and a blend of creativity and business leadership.

Career Progression

Most food and beverage managers build their careers by advancing from hands-on service roles into supervisory and departmental leadership positions. As they take on responsibility for multiple outlets, larger teams, and greater financial performance, they develop the strategic skills needed for senior F&B leadership.

After the role of food and beverage manager, the next step is typically the director of food & beverage, where professionals oversee several venues, lead major initiatives, and shape the property’s overall dining strategy. From there, many move into operations manager, hotel manager, or general manager roles with broader operational oversight.

Lateral opportunities also exist in restaurant consulting, event operations, luxury brand management, concept development, or entrepreneurship.

[Suggested infographic:
Career Path — Restaurant Supervisor → Assistant Food & Beverage Manager → Food and Beverage Manager → Director of Food & Beverage → Operations Manager → General Manager]

Hiring Insights: How to Hire a Food and Beverage Manager

Hiring a strong food and beverage manager has become increasingly competitive across the hospitality industry, particularly for roles that require both financial oversight and guest-experience leadership. At the same time, research shows that F&B operations are rapidly adopting digital tools for forecasting, menu design, and cost control, indicating that employers are now seeking managers who combine operational discipline with technological fluency. This blend of business acumen, people leadership, and innovation remains in short supply, making experienced F&B managers highly sought after in hotels and restaurant groups worldwide.

What to look for:

Strong leadership experience in food service

Expertise in food safety and cost control

Ability to manage multiple outlets

Clear communication and conflict resolution

Experience with menu engineering and financial performance

Top recruiting sources:

Industry associations such as FBMA, HFTP, IoH

F&B leadership programs

Internal promotions from supervisors or assistant managers

leaders who are empowered to innovate with sustainability, nutrition, and technology are far more likely to stay and deliver long-term impact.

Chef and Head Cook Career: Job Description, Skills, Salary & Outlook

Behind every successful kitchen is a culinary leader who turns recipes into coordinated service. Chefs and head cooks stand at the center of daily operations, managing teams, ensuring quality, and delivering consistent guest experiences under pressure.

Behind every successful kitchen is a culinary leader who turns recipes into coordinated service. Chefs and head cooks stand at the center of daily operations, managing teams, ensuring quality, and delivering consistent guest experiences under pressure.

According to the U.S. Bureau of Labor Statistics, employment of chefs and head cooks is projected to grow 7% between 2024 and 2034, faster than the average for all occupations. As dining becomes more experience-driven, skilled kitchen leaders remain essential.

Hospitality Careers Quick Facts

Job Title: Chef / Head Cook

Definition: Manages one kitchen, overseeing menu execution, team supervision, and food quality

Average Salary: Approximately USD 62,000 annually, or USD 45,000–85,000+ depending on experience and operation size

Work Environment: Professional kitchens in restaurants, hotels, resorts, catering companies

Typical Hours: Evenings, weekends, holidays; often 45–60 hours per week

What Is a Chef or Head Cook?

A chef or head cook manages the daily operations of a single kitchen. While line cooks focus on station execution and executive chefs define broader culinary strategy, this role bridges creativity with operational leadership.

In larger organizations, this position is often referred to as chef de cuisine or head chef. In smaller restaurants, the title “head cook” may reflect the same responsibilities.

During peak service, many head chefs may expedite, managing the pass and coordinating dishes across stations to ensure timing, accuracy, and quality. This role requires real-time decision-making and authority, marking a clear transition from cook to culinary leader.

Difference Between a Chef and a Cook

Understanding the difference between a chef and a cook is essential for career planning:

Cook: Prepares ingredients and executes recipes at a specific station under supervision.

Chef: Supervises kitchen staff, manages service flow, ensures quality standards, and may contribute to menu development, managing inventory and cost control.

In short, all chefs cook, but not all cooks manage teams and administration.

Key Responsibilities

If you’ve ever wondered, what does a chef do on a daily basis? The answer blends hands-on cooking with people management and operational control. Chef and head cook responsibilities typically fall into four areas:

Kitchen Leadership & Supervision

Oversee line cooks and prep staff

Expedite service by coordinating orders and controlling timing and presentation

Train and mentor junior kitchen employees

Manage staff schedules and workflow

Food Quality & Menu Execution

Ensure dishes meet flavor and presentation standards

Adjust recipes based on ingredient availability

Maintain portion consistency and plating quality

Contribute to seasonal menu updates

Operations & Cost Control

Monitor inventory and place ingredient orders

Reduce waste and manage food cost percentages

Ensure compliance with food safety regulations

Maintain kitchen cleanliness and organization

Guest Experience & Service Oversight

Respond to special dietary requests

Address service issues during busy periods

Collaborate with front-of-house managers

How to Become a Chef

Becoming a chef requires progressive experience, technical skill, and leadership maturity. The path typically spans several years.

Professional Experience

Most chefs begin in entry-level kitchen roles such as:

Dishwasher or kitchen assistant

Prep cook

Line cook

After mastering station work and demonstrating reliability, professionals may advance to:

Senior line cook / chef de partie

Specialty roles such as pastry chef

Sous-chef

Head cook / chef de cuisine

How Long Does It Take to Become a Chef?

On average, it takes five to eight years of progressive kitchen experience to reach a chef or head cook position. Advancement depends on:

Consistency under pressure

Leadership readiness

Technical proficiency

Exposure to different cuisines

Structured internships and mentorships can accelerate progression.

Education Requirements

While not mandatory in all kitchens, many chefs hold:

A culinary arts diploma or apprenticeship

Food safety certifications (ServSafe, HACCP)

Advanced training in kitchen management

Luxury hotels and larger hospitality groups increasingly favor candidates with formal culinary education.

Is a College Degree Necessary?

A degree is not strictly required to become a chef. However, formal education strengthens technical knowledge and accelerates advancement into leadership roles.

Programs in culinary arts or hospitality management develop competencies in:

Cost control and budgeting

Team leadership

Menu engineering

Operational strategy

As responsibilities expand beyond cooking, business literacy becomes essential.

[Form for SPA Associate’s Degree]

What Skills Are Needed?

Hard Skills

Advanced cooking techniques (grilling, sautéing, roasting)

Recipe costing and food cost management

Inventory and supplier management

Food safety and regulatory compliance

Production planning and kitchen systems

Soft Skills

Leadership and delegation

Communication under pressure

Time management

Conflict resolution

Attention to detail

The transition from cook to chef often hinges more on leadership and organization than on culinary creativity alone.

Tips for Career Changers

Professionals transitioning into culinary leadership from related industries, such as catering, event operations, or cruise hospitality, may leverage transferable skills including:

Team coordination

Scheduling and logistics

Budget oversight

High-pressure service management

Accelerated culinary certificates and supervised internships can bridge technical gaps.

For those coming from industries without prior hospitality or culinary experience, the pathway is more foundational. Starting with hands-on kitchen training, entry-level roles, and basic food safety certification allows aspiring chefs to build practical competence before progressing into leadership positions.

Networking & Career Growth

Kitchen careers often progress through reputation and relationships.

Effective growth strategies include:

Learning multiple stations for versatility

Seeking mentorship from senior chefs

Joining professional associations such as the Worldchefs

Participating in culinary competitions or workshops

Strong networks expand access to leadership roles and higher-end kitchens.

Career Outlook for Chefs and Head Cooks

So, are chefs still in demand?

Yes. The chef job outlook remains positive. The U.S. Bureau of Labor Statistics projects 7% employment growth from 2024–2034, driven by:

Expansion of restaurants and experiential dining

Growth in hotel and resort operations

Increased interest in global cuisines

Demand for skilled leadership amid high turnover

The role continues to evolve with:

Sustainability practices

Waste reduction initiatives

Technology integration in kitchens

Can AI or Robotics Replace Chef Roles?

With robotics, smart ovens, and automated production systems entering professional kitchens, it is fair to ask whether technology could replace chefs. In reality, digital tools and kitchen automation are reshaping how chefs work, but not replacing the role itself.

Technology today supports chefs through:

Inventory forecasting and demand prediction

Automated ordering systems

Recipe scaling and production planning software

Smart kitchen equipment and robotic prep systems

However, no system can replicate:

Sensory judgment (taste, aroma, texture, seasoning balance)

Real-time leadership decisions during live service

Creativity rooted in culture, memory, and emotion

Team motivation, mentorship, and kitchen culture

Technology supports efficiency, but culinary leadership remains fundamentally human.

Career Progression

The head chef role is often the first fully accountable leadership position in a kitchen. From here, career growth shifts from technical execution to business leadership, strategic oversight, or lifestyle-driven transitions.

Chefs may advance to senior culinary leadership roles, such as executive sous-chef, executive chef, or corporate culinary director positions, which emphasize budgeting, vendor negotiation, brand alignment, and multi-unit management.

Others pivot laterally within hospitality into areas that balance responsibility with improved schedules, including catering and event production, food service management, institutional (hospitals or schools) or corporate dining, and other food & beverage operations.

Some chefs pursue entrepreneurship by opening restaurants, launching catering companies, consulting, or developing food products. Others transition into private chef roles, culinary education, or product development pathways that often offer greater schedule stability. At this stage, progression depends less on cooking speed and more on financial literacy, leadership capability, and operational strategy, which is where formal education makes a difference

[Designer Prompt: Infographic – “Career Path After Head Chef”]

Visual ladder or branching pathway showing both vertical progression and lateral career options.

Before:

Prep Cook

Line Cook

Sous-Chef

Current Role:

Head Cook / Chef de Cuisine

After:

Executive Sous-Chef

Executive Chef

Corporate Culinary Manager / F&B Director

Lateral & Alternative Pathways (Side Branches):

Catering & Event Production → Food Service Management → Institutional / Corporate Dining → Private Chef → Culinary Education → Entrepreneurship (Restaurant Owner / Consultant / Food Product Development)

Chef and Head Cook Salary

Hiring Insights: Want to Hire a Chef or Head Cook?

Strong candidates typically demonstrate:

Proven ability to manage service flow

Food cost awareness

Team leadership and mentorship

Adaptability in high-volume settings

Retention improves when employers provide:

Above-average compensation or benefits packages

Clear career progression

Leadership development

Respectful kitchen culture

Work-life balance initiatives

Where to Find Chef Candidates

Culinary schools and vocational programs

Professional associations

Internal promotions from sous-chef roles

Hospitality career fairs

Precision, creativity, and patience define the work of a pastry chef. From laminated doughs and chocolate molds to plated desserts and bakery production, pastry chefs bring structure and artistry to the sweeter side of professional kitchens.

Unlike hot-kitchen roles driven by speed and service intensity, pastry demands planning, technical mastery, and consistency over long production cycles. As restaurants, hotels, and luxury hospitality brands continue to invest in dessert experiences, skilled pastry chefs remain in steady demand across global markets.

Hospitality Careers Quick Facts

Job Title: Pastry Chef

Definition: Culinary professional specializing in desserts, baked goods, and pastry production

Average Salary Range (USD): $40,000–90,000+

Work Environment: Professional kitchens, bakeries, hotels, resorts, cruise ships, catering

Typical Hours: Nights and early mornings, production-based schedules; weekends and holidays

What Is a Pastry Chef?

A pastry chef is responsible for preparing desserts, pastries, breads, and confections in a professional kitchen. They oversee production, presentation, and quality of all baked goods and sweet items, often managing a dedicated pastry section separate from the hot kitchen.

In larger operations, pastry chefs may lead a team and handle menu development, costing, and inventory. In smaller kitchens, they often work hands-on across every stage of production, from dough mixing to final plating.

Key Responsibilities of a Pastry Chef

Pastry chef responsibilities vary by operation size, but typically include the following core areas:

Pastry & Dessert Production

Prepare desserts, pastries, breads, and specialty baked goods

Execute recipes with precision and consistency

Maintain high standards of flavor, texture, and presentation

Menu Development & Creativity

Design dessert menus aligned with seasonal ingredients and brand identity

Test new recipes and refine existing ones

Collaborate with executive chefs on tasting menus and special events

Operations & Quality Control

Plan daily and weekly production schedules

Manage ingredient storage and shelf life

Ensure food safety, hygiene, and sanitation compliance

Teamwork & Supervision

Train junior pastry cooks and commis chefs

Coordinate production timelines with service teams

Maintain clear communication with the main kitchen

How to Become a Pastry Chef

Becoming a pastry chef requires a combination of technical training, hands-on experience, and gradual specialization. Most professionals progress through structured kitchen roles before leading pastry sections independently.

Professional Experience

Many pastry chefs begin their careers in entry-level kitchen roles such as commis chef, baker’s assistant, or pastry assistant. Early experience focuses on:

Measuring and scaling ingredients accurately

Mastering foundational techniques such as dough handling, creams, and fillings

Understanding production planning and time management

With experience, professionals move into pastry chef de partie or junior pastry chef roles, taking on responsibility for specific products or service elements.

Education Requirements

While not always mandatory, formal pastry education significantly accelerates skill development and employability. Common qualifications include:

Pastry arts diplomas or certificates

Culinary apprenticeships with pastry specialization

Food safety certifications (e.g., ServSafe, HACCP)

In hotels and luxury hospitality environments, employers increasingly value candidates with structured culinary training due to the technical precision required.

Is a College Degree Necessary?

A college degree is not required to become a pastry chef. However, for those aiming to progress into senior pastry chef, executive pastry chef, or broader food and beverage management roles, a culinary or hospitality management degree can be a strong advantage.

Degree programs develop skills in:

Cost control and menu pricing

Team leadership and scheduling

Operations management and purchasing

These competencies become critical as responsibilities expand beyond production.

What Skills Are Needed to Be a Pastry Chef?

Hard Skills

Pastry and baking techniques (lamination, fermentation, chocolate work)

Recipe scaling and production planning

Precision measuring and temperature control

Food safety and hygiene compliance

Soft Skills

Attention to detail and consistency

Creativity and visual sensibility

Time management and organization

Patience and resilience in repetitive production work

Tips for Career Changers

Professionals transitioning into pastry from other fields often succeed if they bring discipline, structure, and a willingness to learn. Transferable skills include process management, creativity, and manual precision.

Career changers often benefit from:

Short-term pastry certifications

Intensive professional courses

Entry-level pastry roles to build production experience

Pastry kitchens reward reliability and technical improvement over time

Tips for Career Changers: From Home Baker to Pastry Chef

Transitioning from home baking into professional pastry kitchens is possible and increasingly common. Greater public awareness of specialized baking, driven by culinary media, competitions, and social platforms, has exposed wider audiences to the technical depth, creativity, and career potential of pastry arts. As a result, more experienced home bakers are choosing to formalize their skills and pursue professional pastry roles.

Many self-taught bakers develop strong instincts for flavor, creativity, and craftsmanship through personal projects, pop-ups, or small home-based businesses, providing a strong starting point for professional development.

Difference Between Home Baking and Professional Pastry Kitchens

Professional pastry work differs significantly from home baking. While creativity remains important, commercial food and beverage outlets prioritize consistency, efficiency, and operational discipline.

Key differences include:

Scale and repetition: Producing large volumes with identical results

Time pressure: Working within production schedules and service deadlines

Standards and compliance: Strict food safety, hygiene, and labeling requirements

Team-based execution: Operating within brigade systems rather than independently

Transitioning from Home Baking to Professional Baking

Home bakers transitioning into professional kitchens typically need to formalize their experience through structured training and entry-level roles.

Common preparation pathways include:

Short-term pastry certifications or intensive courses

Starting as a pastry assistant or commis chef to gain commercial experience

Internships in professional kitchens to learn production workflows and standards

For motivated career changers, combining self-taught experience with structured training and hands-on kitchen exposure creates a credible and sustainable pathway into the pastry profession as an employee or as an entrepreneur.

Networking & Career Growth in Pastry Arts

Career advancement in pastry relies heavily on reputation and professional networks. Building visibility and credibility helps pastry chefs access higher-end kitchens and leadership roles.

Effective strategies include:

Seeking mentorship from senior pastry chefs

Participating in workshops, tastings, and competitions (such as the MOF)

Leveraging alumni and industry networks

Gaining experience across different pastry styles (bakery, plated desserts, chocolate)

Strong networks often lead to international opportunities and specialization.

Career Outlook for Pastry Chefs

Global demand for skilled pastry professionals remains stable, particularly in hotels, luxury resorts, and destination dining. As guest expectations evolve, pastry chefs play an increasingly important role in shaping memorable dining experiences.

Key trends influencing the role include:

Greater focus on visual presentation and storytelling

Demand for reduced-sugar and alternative desserts

Integration of sustainability and waste reduction practices

Pastry chefs who balance creativity with operational discipline are best positioned for long-term success.

Pastry Chef Career Path and Progression

Pastry chef roles follow a specialized track within the culinary career ladder, focused on technical precision, creativity, and consistency. Titles and responsibilities vary by region and operation, but progression typically reflects increasing mastery of baking and dessert techniques alongside production reliability.

Most pastry professionals begin in commis pastry chef, pastry assistant, or baker roles before advancing into pastry chef or chef de partie (pastry) positions. With experience and strong performance, progression often leads to pastry sous-chef and head pastry chef roles, where responsibilities expand to menu development, quality control, costing, and team supervision.

Beyond restaurant kitchens, experienced pastry chefs may move into hotels and resorts, luxury patisserie or chocolaterie, catering and events, cruise operations, product development, or teaching and entrepreneurial roles. These pathways apply the same core technical foundations across a wider range of business models and work environments

Waiting tables is often seen as a short-term or entry-level job, but in reality, waitstaff roles are among the most essential and versatile and transferable positions in the hospitality industry. From neighborhood cafés to Michelin-starred restaurants, waiters and waitresses are at the center of the guest experience, combining service, sales, and human connection in real time

For many, waitstaff positions offer flexible schedules, strong earning potential through tips, and a clear pathway into supervisory and food-and-beverage leadership roles. Few entry-level jobs provide such immediate responsibility, income variability, and exposure to customer behavior across cultures and concepts.

Quick Facts: Waitstaff Career Overview

Job titles: Waitstaff, waiter, waitress, server

Work environment: Restaurants, hotels, cafés, bars, resorts, cruise ships, and event venues

Typical hours: Shift-based; evenings, weekends, and holidays are common

What Is Waitstaff?

While often classified as entry-level roles, waitstaff positions require strong interpersonal skills, adaptability, and situational awareness. The role changes significantly depending on the type of establishment, from fast-casual restaurants to fine dining venues, hotel restaurants, and high-volume chains, which all require different service styles and competencies.

What Does a Waiter or Waitress Do?

A waiter job description or waitress job description typically includes a mix of service, sales, and coordination tasks that directly influence guest satisfaction and revenue.

Demand for restaurant waiters and waitresses remains steady worldwide, supported by the global foodservice industry and continued consumer spending on dining experiences. According to the U.S. Bureau of Labor Statistics, employment for food and beverage serving roles is expected to remain stable over the coming decade, reflecting the essential, people-centered nature of hospitality work.

While technology may streamline ordering or payment in some venues, human service remains central to full-service dining, where atmosphere, personalization, and emotional intelligence directly influence guest satisfaction and repeat business.

For many professionals, waitstaff roles are not an endpoint but a gateway into long-term hospitality careers, offering early exposure to operations, sales, and leadership in fast-paced, real-world environments

Waitstaff Salary: Base Pay, Tips, and Experience Level

Note: Figures are indicative ranges. Actual earnings depend on restaurant concept, location, shift patterns, and experience level.

Career Progression: From Waitstaff to Leadership Roles

One of the most compelling aspects of waitstaff roles is their clear upward mobility and flexibility across hospitality sectors.

Progression Within Food & Beverage

Many professionals advance along a structured path as they build experience and leadership skills:

Waiter or waitress

Senior waiter or section leader

Shift supervisor or team leader

Assistant restaurant manager

Restaurant manager or food & beverage manager

Lateral and Cross-Functional Moves

Waitstaff experience also opens doors to related roles across hospitality, including:

Banqueting and events operations

Front office and guest relations

Yachting and private service roles

Aviation stewarding (cabin crew / flight attendants)

Training, service excellence, and quality assurance roles

Hospitality operations and general management

Hands-on service experience builds credibility and people-management skills that remain valuable throughout a hospitality career.

Tips for Career Changers

Waitstaff roles are a common and effective entry point for students, career switchers, and professionals returning to the workforce. Individuals with backgrounds in retail, customer service, sales, or tourism often transition smoothly into waitressing or waiter roles.

Those new to hospitality typically benefit from:

Formal training on basic food and beverage service safety and service standards

Building confidence in customer-facing communication

Understanding how restaurants operate during busy service periods

This experience provides a practical foundation for future progression into supervisory, food and beverage, or hospitality management roles.

Hiring Insights: Recruiting Waitstaff

For restaurants and hospitality operators, hiring waitstaff is less about formal qualifications and more about attitude, reliability, and service mindset. Successful teams are built by balancing technical ability with interpersonal skills and cultural fit.

Employers typically prioritize:

Strong communication and a genuine interest in guest service

Reliability, punctuality, and willingness to work flexible shifts

Ability to learn service standards quickly and work under pressure

Professional presentation and respect for uniform and grooming guidelines

While prior experience can be an advantage, many establishments successfully train entry-level candidates who demonstrate the right mindset. Structured onboarding, clear service standards, and consistent feedback are key to retaining waitstaff in a competitive labor market.

Why Waitstaff Experience Matters in Hospitality Careers

Waitstaff roles are often underestimated, yet they sit at the crossroads of service, sales, operations, and human interaction. Beyond restaurants, the skills developed on the floor open doors to lateral career moves across hospitality and service-driven industries.

Professionals with strong waitstaff experience regularly transition into areas such as yachting stewarding, aviation stewarding (cabin crew), luxury hotels, private service, events, and guest relations roles. These environments reward the same core strengths: adaptability, emotional intelligence, attention to detail, and the ability to perform under pressure.

For those who choose to build on it, waitstaff experience is not just a starting point, it’s a portable foundation that supports international mobility, specialization in luxury or experience-led service, and long-term progression into hospitality leadership.

Behind every smooth breakfast, lunch, and dinner service in a restaurant is a team of line cooks executing dishes with speed, precision, and consistency. While the role may not always be visible to guests, line cooks are the backbone of professional kitchens, responsible for transforming recipes into plates under intense time pressure.

For many culinary professionals, working as a line cook is the first true immersion into the rhythm, discipline, and standards of the restaurant industry. It is where technical skills are sharpened, teamwork is tested, and future chefs are shaped.

According to the U.S. Bureau of Labor Statistics (BLS), demand for chefs and head cooks is expected to grow 7% from 2024 to 2034 (much faster than the average for all occupations), reflecting the globally increasing interest in innovative, experience-driven dining.

Quick Career Key Facts

Job Title: Line Cook

Definition: Prepares and plates food during service while managing a specific kitchen station

Earning Potential: Low to medium, with progression opportunities

Work Environment: Fast-paced professional kitchens

Typical Hours: Variable shifts, including evenings, weekends, and holidays

Common Settings: Restaurants, hotels, resorts, catering operations, cruise ships

What Is a Line Cook?

A line cook is a professional kitchen team member responsible for preparing menu items during service at a designated station, such as grill, sauté, fryer, or cold food preparation (garde manger). Line cooks work under the supervision of a sous-chef or head chef. They are expected to master basic culinary skills and execute dishes quickly while maintaining quality and food safety standards.

This role sits at the core of kitchen operations, translating menu plans into consistent guest experiences, service after service.

Key Responsibilities of a Line Cook

Line cook responsibilities vary by kitchen size and concept but typically fall into four main areas:

Food Preparation and Service Execution

Prepare ingredients according to recipes and production lists

Cook and plate dishes accurately during service

Maintain consistency in portion size, flavor, and presentation

Station Management

Set up and break down assigned stations

Monitor stock levels and communicate replenishment needs

Maintain cleanliness and organization throughout service

Food Safety and Hygiene

Follow food safety and sanitation regulations

Store ingredients correctly to prevent contamination

Clean equipment and surfaces according to kitchen standards

Teamwork and Communication

Coordinate timing with other stations during service

Respond to instructions from chefs efficiently

Support teammates during high-volume periods

How to Become a Line Cook

Many line cooks enter the profession through a mix of hands-on experience and, in some cases, formal culinary training. While most employers don’t require a culinary degree, having completed professional cooking courses or certificates can give applicants a competitive advantage, particularly in higher-end kitchens or structured hospitality operations.

Professional Experience

Many start in entry-level kitchen roles such as kitchen assistant or prep cook. These positions build familiarity with ingredients, tools, and kitchen workflows before progressing to a line station.

Early exposure focuses on:

Knife skills and basic cooking techniques

Speed, organization, and mise en place

Working under pressure during service

With consistency and reliability, cooks are assigned stations and gain increasing responsibility.

Education Requirements

Formal education is not always required, but many line cooks benefit from:

Culinary arts diplomas or certificates

Apprenticeships in professional kitchens

Food safety certifications (e.g., ServSafe, HACCP)

Structured training accelerates technical competence and improves employability, particularly in hotels and high-volume operations.

Is Culinary School Necessary?

No. Many line cooks start successful careers through on-the-job training alone. However, culinary education can shorten learning curves, expose cooks to diverse cuisines, and support faster progression into supervisory roles.

However, progression into senior culinary roles, such as executive chef, requires solid knowledge of management and business principles. Skills in cost control, basic accounting, leadership, and team management become essential as responsibilities expand beyond cooking to include budgeting, staffing, and operational decision-making.

These management and business skills can be developed through a bachelor’s degree in hospitality, which complements culinary expertise with finance, leadership, and operational training.

[CTA form module here]

What Skills Are Needed to Be a Line Cook?

Hard Skills

Knife skills and food preparation techniques

Cooking methods (grilling, sautéing, roasting, frying)

Recipe execution and portion control

Food safety and hygiene compliance

Soft Skills

Ability to work under pressure

Time management and organization

Team collaboration

Attention to detail and consistency

Tips for Career Changers

Professionals transitioning from other industries often succeed as line cooks if they bring discipline, stamina, and adaptability. Transferable skills include time management, teamwork, and stress resilience.

Accelerated culinary courses, short-term certifications, or kitchen internships can help bridge technical gaps and demonstrate commitment to employers.

Networking and Career Growth in Professional Kitchens

Career progression in kitchens is strongly influenced by reputation and relationships. Reliability, attitude, and willingness to learn often matter as much as technical skill.

Effective growth strategies include:

Learning multiple stations to increase versatility

Seeking mentorship from senior chefs

Participating in culinary workshops or competitions

Leveraging alumni and industry networks

Strong professional connections often lead to faster promotion opportunities and access to higher-end kitchens.

Career Outlook for Line Cooks

Demand for skilled kitchen staff remains steady across global hospitality markets. While turnover is high, operators consistently seek dependable cooks who can maintain quality under pressure.

The role of line cook continues to evolve with:

Increased focus on food safety and traceability

Greater efficiency through standardized processes

Exposure to sustainability practices and waste reduction

For those committed to the craft, the position offers a clear entry point into long-term culinary careers.

Line Cook Career Path and Progression

Line cook roles sit at an early but essential stage of the culinary career ladder, focused on building technical execution, speed, and kitchen discipline. Titles and responsibilities vary by region and type of operation, but most cooks progress through increasingly complex stations as they gain experience and reliability.

With time, strong performance, and exposure to leadership responsibilities, line cooks typically advance into senior line cook or chef de partie roles, followed by sous-chef and head chef positions. Progression depends not only on cooking skill, but also on communication, teamwork, and operational awareness.

Beyond traditional restaurant kitchens, experienced line cooks may also move laterally into hotel and resort kitchens, catering and events, corporate dining, cruise and private yachting operations, or institutional food service roles. They may also transition into food and beverage management roles. These paths often offer different work rhythms while building on the same core culinary foundations.

Boutique Hotels Defined: Unique Experiences & Differences

Travelers are increasingly seeking authenticity and local immersion. Boutique hotels can better meet this demand than large, often impersonal, branded hotels.

Travelers are increasingly seeking authenticity and local immersion. Boutique hotels can better meet this demand than large, often impersonal, branded hotels.

This article explores what boutique hotels are, how they differ from regular hotels, and what travelers seek from the boutique hotel experience.

What are Boutique Hotels?

The term boutique hotel emerged in the early 1980s as a reaction to the standardized hotels that dominated the American and global landscape. Boutique hotels are distinguished by their intimate size, with the threshold often considered to be 100 rooms, although one of pioneers Ian Schrager states that:

“Boutique ‘has nothing to do with size… It has to do with having a single focus, an attitude, product distinction, creating an elevated experience… It’s not trying to be a generic commodity to satisfy all people. There’s a singular focus.” (HospitalityNet).

Conceptually, the boutique hotel has existed much longer. They are locally rooted, filled with personality, and places where guests would interact – so basically every hotel on earth before the naissance of global hotel brands.

Now, in a roundabout way, we have come to a place where global chains are looking to recreate, through acquiring and launching smaller-scale lifestyle brands, the authenticity and intimacy of boutique hotels (something they may be structurally unable to deliver).

Image placeholder: boutique hotel lobby or entrance with distinctive design elements such statement lightning or artwork

What is the Difference Between a Boutique Hotel and a Hotel?

The main differences between a boutique hotel and regular hotel are the following:

Size and ambiance: As mentioned, boutique hotels have a smaller room capacity, resulting in a more intimate and private atmosphere. Compare that to a large convention hotel of, say, a thousand rooms that is standardized through-and-through – a more impersonal experience to say the least.

Service: Due to the smaller scale of operations, the service at boutique hotels tends to be more personalized, and staff have the capacity to better cater to individual guest needs. It’s easier to remember the preferences of ten guests than a thousand, which means that the larger the scale, the more standardized operating procedures need to be to ensure efficiency.

Design and character: Boutique hotels may have more unique or thematic decor that reflects the local culture or history. This contrasts with the uniform design of chain hotels, that again, is the case for the sake of efficiency and scalability.

Amenities: Due to their smaller scale and distinct locality, the amenities can be curated and locally sourced. Furthermore, the curation often extends to unique culinary offerings and other tailored experiences.

In a nutshell, boutique hotels are often more intimate and culturally immersive than standard hotels. The appeal of each really depends on the target clientele, as the former is better suited for travelers who are looking for more authenticity and the latter best for those who are prioritizing consistency and brand loyalty.

The Boutique Hotel Market

In 2024, the boutique hotel market was valued at $26.7 billion, and is estimated to reach $40 billion by 2030 with a CAGR of 7.2%. The growth is fueled by the growing trend of experiential travel and the consumer demand for authentic, personalized experiences that differ from traditional hotel offerings.

Image placeholder: infographic with market growth (submitted through request form 11.2.2026)

Particularly, the luxury segment has been strong, but there is a growing appetite for mid-scale boutique hotels that still offer guests a distinctive experience, but at a more affordable price tag.

Leisure travelers make up more than 70% of the revenue of the market in 2023, but business travelers are a growing customer segment for boutique hotels. This could possibly be attributed to the rise of ‘bleisure’ traveling, where business travelers are looking for enjoyment during their business trips beyond functionality.

What Travelers Want from Boutique Hotels

The growth of the boutique hotel sector can be attributed to how well it matches current traveler preferences. So, what exactly are guests looking for?

The Vibe

Guest reviews mentioning the word “vibe” increased tenfold between 2023 and 2024, and more than 90% of travelers say the vibe of a hotel is important when booking and 67% would pay more to stay at a hotel that is aligned with their preferred vibe.

The vibe is especially important for younger generations, as 78% of millennial and Gen Z travelers actively prioritize unique and thoughtfully designed spaces over traditional luxury markers.

That said, the atmosphere of a place does not solely come down to interiors. In fact, customer service has been named the most important constituent of a vibe.

Local Authenticity

Booking.com reports that 77% of travelers want authentic experiences that are representative of local culture. Furthermore, 73% would want the money they spend at the hotel to go back to the local community, a sentiment embodied by regenerative hospitality.

Boutique hotels are well positioned to deliver locally rooted experiences as, due to their smaller scale, they have more capacity for hyper-local curation.

Image placeholder: breakfast spread with locally-sourced ingredients

Personalization

Personalized and tailored experiences are increasingly important for travelers – so much so that it has become the baseline expectation for 71% of consumers.

When hotels embrace this, the improved guest experience has a direct positive impact on loyalty and guest retention as well as revenue. Conversely, 63% of travelers say that poor personalization negatively impacts their perception of the brand.

Wellness

The wellness economy is now worth over $6.3 trillion globally, and hotel guests are a significant part of that spend. Wellness tourism is expected to grow at 10.2% annually through 2028, expanding faster than the broader hospitality market.

Wellness is a natural fit for boutique hotels, and 80% of travelers are willing to pay more for unique wellness experiences, whether it’s a customized spa treatment or in-room yoga kits (a yoga mat in the room is something I have been spotting more and more recently!).

Image placeholder: photo of HOY hotel, requested from Charlotte

An example that I would like to highlight is the HOY Hotel in Paris, founded by EHL Alumnus Charlotte Gomez de Orozco. In addition to being a beautifully designed boutique hotel has a yoga studio in the building as well as bespoke treatment rooms with a holistic wellness offering.

Placeholder for quote from Charlotte: ask her what makes the soul of a boutique hotel/why wellness is an important part of the offering of HOY

Challenges of Running a Boutique Hotel

For their appeal, boutique hotels are not without operational hurdles, many of which stem from the very characteristics that make them distinctive. Independent boutique hotels specifically often need to rely more on online travel agencies for visibility, as they do not have the brand recognition or loyalty programs of a global chain.

The large commissions that can reach 30% or higher make distribution costs very expensive, considering already tighter margins. Therefore, boutique hotels should prioritize investments into direct booking strategies.

Furthermore, diverse room types and fluctuating demand can make revenue management trickier, as well as proper marketing that is representative of the uniqueness of the property.

All of this comes down to more limited resources and staffing. Understaffing is a particularly critical gap for boutique hotels as it directly undermines the guest experience and personalization that is so central to the segment’s offering. It is no easy feat to cultivate service culture from scratch, but it is still a necessity for independent boutique operators.

These challenges help explain why many independent boutique hotels ultimately choose to affiliate with a soft brand or sell to a larger hotel group, even if it means compromising some of the uniqueness that initially defined them.

Consolidation: Large Global Chains are Absorbing the Market

According to Skift, boutique hotels have sparked growing interest from large franchises, speaking to the attractiveness of the segment. Many previously independent properties are now branded and part of global hotel distribution ecosystems.

This shift is a direct consequence of global brands wanting to respond to consumer demands, shifting towards unique travel experiences and immersion in the local culture – dimensions that brands have a hard time delivering with ultra-standardized copy-paste concepts.

The Rise of Lifestyle Hotels by Global Brands

It is impossible to tackle the boutique hotel question today without taking a more in-depth look at how global brands are responding.

The global chain ‘equivalent’ to the boutique hotel that has emerged is the lifestyle hotel. They are brands or collections that are designed to offer a similar vibe to the boutique hotel but at a much larger scale, often belonging to a global chain.

Lifestyle hotels often emphasize design and interesting shared spaces where work and play can blend. Size-wise, though, they may be much larger than a traditional boutique hotel would.

Image placeholder: lifestyle hotel lobby with coworking vibes

Soft brands collections of global chains (such as Marriott’s Autograph Collection or Hilton’s Canopy) is a related category, as the portfolio properties are able to retain their individuality and do not succumb to strict brand standards.

According to a January 2026 Skift analysis, the five largest hotel companies now run about 40 lifestyle brands, comprising over 2,000 properties and roughly 350,000 rooms. These hotels also have higher ADRs and margins compared to traditional hotels as demand has shifted towards more distinct and experience-driven stays.

Can a Global Chain Hotel be a True Boutique Hotel?

So, in short, global chains have resorted to both acquiring boutique hotels and their adjacent brands as well as to creating their own lifestyle brands.

The question is, however, whether these mass corporate buyouts of boutique hotels threaten the unique selling point that made them desirable in the first place. Brands always come with a level of standardization from operations to efficient service protocols, which can make one hotel (or brand) owned by the same group distinguishable from another.

Why are independent boutique hoteliers choosing to brand their properties? Branded properties can offer greater exit opportunities, as a well-known flag often promises price premiums and, consequently, sparks investor confidence.

Furthermore, the marketing and distribution reach of global brands is often unparalleled. Global chains such as Hilton and Marriott have essentially built-in clientele from their loyalty programs, which can be invaluable.

Still, for the traveler and boutique hotel purists, the brand may appear to dilute the uniqueness that made the boutique hotel special and worthwhile in the first place. Some argue that the essence of a boutique hotel is that it’s independently run and a stand-alone property, while others use the terms boutique and lifestyle interchangeably when referring to branded hotels.

The Future of Boutique Hotels

As we have seen, boutique hotels match changing traveler preferences beautifully, as the demand for authentic and unique experiences plays directly to their strengths. Furthermore, 80% of travelers are willing to spend more on well-being experiences, which bodes well for boutique hotels with wellness offerings.

That said, the tension between independence and consolidation will continue to define the segment. As global chains expand their lifestyle brand portfolios, the word “boutique” is at risk of becoming as diluted as “luxury”, starting to resemble more of a marketing term rather than having any meaningful distinction or substance.

All things considered, I think the properties that will thrive in the long run are those that stay true to what made boutique hotels desirable in the first place, namely that they have genuine local roots and the kind of personalized service that cannot be replicated at scale.

Debates around AI in the foodservice industry have accelerated in recent years, but what industry professionals really need is clarity. In this article, we will discuss where AI can actually create operational value, see how the business context shapes what “good” AI use looks like, and understand what leaders are invited to change to ensure their businesses are future-proof.

What Do We Mean by “AI” in Foodservice (And Why the Distinction Matters)

AI has become a buzzword, and in foodservice, it seems to have become an umbrella term for automation and robotics, but these terms are not the same.

Before discussing the operational value of these technologies, we need to clearly distinguish them:

Automation follows fixed rules.

Robots are physical machines designed and programmed to carry out tasks.

Artificial intelligence (AI) refers to a software system that can comprehend and learn from data, make decisions, and improve its performance over time.

Although a robot isn’t AI, it becomes AI-powered if it can:

• Adjust cooking times based on ingredient temperature
• Modify portion sizes based on demand forecasts
• Learn from past outcomes to improve taste, consistency, or efficiency
• Respond to real-time sensor data rather than fixed rules

In simple terms: A robot is the “body,” and AI is the “intelligence” behind it. Understanding the difference helps us better evaluate which AI-driven innovations can truly improve performance versus those that simply add complexity.

What will really make a difference in the end isn’t AI itself but how well foodservice businesses prepare their operations, data, and staff to use it to its full capacity. Before we get into this, it is worth taking a moment to step back and understand the context behind AI's growing traction in foodservice, as well as its parallel adoption in AI in food manufacturing and adjacent production environments.

Why Is AI Gaining Momentum Across the Foodservice Industry?

If you are an industry professional, you are familiar with the strain of doing more with less nowadays while ensuring a high-quality service to keep guests' experiences at the highest possible level. AI is becoming increasingly popular in the foodservice industry because it assists when restaurants are short-staffed, operational costs rise, and the need for greater efficiency grows.

It is not just trending because tech companies want to sell us something. This technology is providing us with the opportunity, if well utilized, to fill the gaps. We will touch upon this below.

1. Labor pressure

Labor pressure is a real and significant challenge because staff shortages aren’t just seasonal but structural. Managers are forced to maintain their establishment’s service levels even when they lack sufficient staff.

To deal with this pressure, businesses are implementing AI-driven systems and scheduling tools.

According to data from quick-service and foodservice operators, AI-based scheduling systems can increase staffing efficiency by up to 30% and reduce labor costs by up to 12%, while automation and customer service technologies can reduce staff workload by up to 40%.

Academic research supports the functional relationship behind these outcomes. A 2025 empirical study of hospitality firms found that AI adoption does not significantly reduce overall employment levels but instead reallocates work by absorbing routine, administrative, and cognitively demanding tasks.

With that said, it is less about replacing people with robots than about relieving employees' cognitive overload with intelligent support, allowing staff to focus on what makes the hospitality and foodservice industry beautiful – connecting with people.

2. Cost volatility

Adjusting to unpredictable price changes is a well-known challenge across the foodservice industry: suppliers change prices, labor costs are rising, rent is increasing, and ingredient costs are spiking, making menu planning risky. AI systems can assist in analyzing these changes across purchasing, waste, and seasonality, providing operators with a buffer to make the necessary adjustments.

In the foodservice domain, AI-based sales forecasting models have been shown to reduce forecast errors by approximately 19–33% compared to traditional methods, making more accurate demand and purchasing planning possible.

By adjusting prices and allocating resources in response to real-time market signals, AI-driven revenue management and dynamic pricing systems enhance financial performance and help businesses maintain stability amid cost volatility, according to systematic studies in the hospitality industry.

Another interesting finding from a scholarly review from 2025 is that AI-powered demand forecasting and pricing are highlighted as key tools for enhancing profitability and controlling costs amid changing economic conditions.

3. Scale vs consistency

How to turn a first-time diner into a loyal customer? With consistency.
Consistency is the backbone of an establishment's reputation. Machine learning food applications can help identify patterns, such as peak dining times, popular menu combinations, and recurring guest preferences, for example.

It should not mean that robots are replacing the heart of a restaurant – the cooks – but rather that they are supporting your staff with information that was previously hard to see.

4. Data availability

If we were traveling 15-20 years back in time, most data was kept safe in people's minds, on paper tickets, or in simple systems. Nowadays, Academic research in restaurant analytics shows that datasets can be combined to support strategic and operational decisions. From menu design and reservation management to queueing and multi-channel order flows, helping restaurateurs uncover patterns that humans alone could not detect.

Moreover, systematic research on big data analytics in the food and hospitality sectors has found that AI and machine learning applications rely on large, complex datasets from across the value chain to generate actionable insights for inventory control, quality improvement, and process optimization.

Other machine-learning tools can extract meaningful sentiment and feature patterns from large volumes of customer feedback, enhancing managers’ ability to understand and respond to customer expectations.

Artificial intelligence thrives on patterns: when powered by vast, reliable datasets, it turns raw information into insights that help operators optimize operations, improve the customer experience, and adapt rapidly to change, an essential capability in the emerging smart food industry.

How Foodservice Leaders Can Prepare Their Operations for AI Adoption

Approaching AI in the food service industry simply as a technology upgrade rather than an operational shift might make things more complicated. The following principles outline how foodservice operators can prepare to deliver measurable value while protecting the heart of the business: hospitality.

1. Map how decisions are made during service

Before introducing AI, leaders must understand how their operation truly runs, not how it looks on paper.

That means walking through a full service from prep to close and observing where decisions are made under pressure, asking:

• How are prep quantities being set?
• How is the labor adjusted?
• How are bottlenecks being handled?
• How are mistakes recovered?

Paying attention to moments where teams rely on habit, intuition, or last-minute fixes rather than clear standards.

Many of these inconsistencies come from deeper structural issues outside of service itself, especially in cost control and HR workflows, which heavily influence day-to-day decisions. As chef Patrick Ogheard puts it:

AI delivers value when it improves decision-making. If decision ownership, timing, or criteria are unclear, automation will only accelerate inconsistency, and AI will simply make bad decisions faster.

2. Clean up existing data before introducing new technologies

Data must be reliable before AI can recognize patterns and support better decisions. No advanced analytics are needed, but consistency is key. This includes:

• Having single and standardized names for products across systems
• Structured modifiers rather than free-text entries for customization requests
• Documenting waste in real time

3. Begin with one operational challenge to tackle first

Whether it is frequent stockouts, misaligned working hours, or service bottlenecks, the objective is to focus on relieving a specific source of friction that clearly impacts margins or team morale. Once the challenge is identified, leaders can assess whether the issue requires better execution through automation or better decisions through AI-supported forecasting and decision support. Success measures should be specified in advance, and solutions should be tested on a limited scale before expanding.

4. Redefine roles before introducing AI-supported automation

A dominant concern regarding AI in the foodservice industry is the potential loss of employment opportunities. But rather than taking jobs away, AI will change how work gets done. This is why roles must be reconsidered so teams can work alongside AI rather than around it.

Therefore, it is key to be explicit about:

• What decisions will be made by staff
• Where technology can support
• How judgment and hospitality are rewarded.

Automation changes who does the task, AI changes how decisions are made, and roles must be redesigned with both in mind.

5. Standardize what “good” looks like

Defining clear standards for execution, timing, and acceptable variation, whether it is in preparation service flow or what to do when something goes wrong, is what makes quality scalable and automation possible. Without agreed-upon definitions of “good,” neither humans nor machines can perform reliably.

Where to start:

Prep levels for top-selling items
Decide how many of your highest-volume items to prep before service, when to replenish prep, and when to stop prep to avoid waste. Document it and use it consistently.

Handoff timing during peak hours
Set a clear expectation for how quickly completed items must be delivered to the guest or delivery partner once ready. Assign ownership so food does not sit unnoticed during busy periods.

Order accuracy checks
Define one clear checkpoint before orders leave the kitchen, with the assigned responsibility. Focus especially on modifiers and allergens.

Service recovery for common issues
Identify the most frequent challenges and define a simple response: who owns it, what actions are allowed, and when to advance the case to the next level.

6. Encourage transparency and accuracy in day‑to‑day work

AI relies on accurate inputs and consistent execution. If teams are rewarded for behaviors that conflict with those requirements, the system will fail.

This dynamic is well documented in decision-support and information systems research, which consistently shows that poor data quality, including delayed, incomplete, or biased inputs, systematically degrades analytical outputs and leads to flawed operational recommendations, a phenomenon commonly described as “garbage in, garbage out.”

As an example, let’s take waste data:

If you are an industry professional, you know that performance evaluations are often tied to staying within a tight food cost range. When waste is logged accurately and in real time, food cost can appear worse in the short term, even if operations have not changed. To avoid negative scrutiny, waste entries are delayed, estimated, or skipped altogether.

AI systems interpret this incomplete data as lower demand and respond with tighter prep and ordering recommendations. The result is more stockouts, more last-minute fixes, and growing frustration within your team. When overriding these recommendations, the technology is blamed, when in reality, it was trained on distorted inputs.

To create value, behaviors such as honest waste logging and adherence to standards must be supported, not penalized. AI improves decisions only when the organization rewards transparency and consistency, not just short-term metrics, a finding consistently supported by empirical research on data-driven decision-making and operational performance.

7. Build ownership before introducing automation

Every AI-supported process needs a clear owner. Someone must be responsible for reviewing outputs, adjusting inputs, and escalating issues.

Assigning ownership at both the operational and leadership levels will make sure, AI becomes an active part of your business.

From Readiness to Results: Where AI Delivers Operational Value

AI in foodservice delivers the strongest returns by reducing variability, improving foresight, and protecting consistency at scale rather than replacing judgment or hospitality. But once these operational fundamentals are in place, how does that look in real-world cases, and where does AI actually pay off?

Demand and inventory planning

Two of the most consistent value drivers are AI-powered forecasting and inventory optimization.

Cornell University (with Willow) found that, with the assistance of AI systems specifically deployed to categorize food waste in commercial kitchens, leftovers can be reduced by up to 30% within months of adoption. This isn’t just good for businesses but also for the environment.

Academic research demonstrates that machine learning models applied to restaurant demand data can significantly improve accuracy over traditional methods, with documented reductions in waste of 14%-52%.

Compared with managerial heuristics, AI-based sales forecasting for a German fast-food franchise reduced prediction error by approximately 19%–31%, resulting in more accurate sales and inventory planning, according to a case study in a different research environment.

Operational efficiency and cost control

Some of the most consistently documented benefits of AI use in foodservice connect to improved forecasting and tighter inventory control.

Typically combined with point-of-sale and inventory management systems, AI-enabled inventory and forecasting systems analyze past sales data alongside external demand signals such as local events, seasonality, and weather. These technologies assist operators in better matching supply with anticipated demand by generating data-driven recommendations for food preparation and purchasing.

For example, empirical research shows rather compelling results: AI-based forecasting and waste-monitoring tools can significantly reduce overproduction and food waste. Compared with traditional estimation methods, reported reductions range from 20% to over 40% in commercial kitchen and catering environments.

Beyond inventory management, AI-supported scheduling and operational planning technologies can assist foodservice operators in aligning workforce levels with projected demand. This reduces labor inefficiencies, overtime, and last-minute schedule adjustments, allowing managers to focus more on operational execution and quality management rather than reactive problem-solving.

Guest experience that grows without undermining trust

Operators can speed up service and maintain brand values when AI is confined to support duties, such as managing routine queries, enabling predictive wait-time updates, or presenting personalized recommendations. Industry reporting shows that big chains are increasingly experimenting with speech AI and machine learning to increase order accuracy and throughput without sacrificing guest trust, even though specific named examples of guest-facing forecasting systems are less frequently published in peer-reviewed research.

Risk, safety, and compliance

Through compliance inspections and predictive monitoring, AI systems also support operational resilience. The underlying techniques, such as combining IoT sensing and machine learning to identify safety concerns or equipment failures before they get worse, are directly applicable to multi-unit restaurant environments and have been demonstrated to reduce spoilage and downtime, even though a large portion of this literature is in related fields (such as airline food safety).

What Leaders Need to Understand Before Applying AI

So what should we actually take away from these insights when we go back to leading our businesses tomorrow?

AI in the foodservice industry only works under very specific conditions, and we need to recognize this in order to drive performance and add operational value to our businesses.

AI creates value where decisions already exist, but are made under pressure
When applied to recurring decisions such as demand forecasting and inventory planning, machine-learning models significantly outperform traditional methods, reducing forecast error and improving purchasing accuracy, rather than replacing managerial judgment, according to empirical research using real restaurant sales and operational data.

AI depends on data quality and organizational behavior, not technological sophistication. A well-documented connection in research on decision support and information systems. It shows that delayed, incomplete, or biased operational data worsens analytical outputs and leads to poor recommendations. This is often called "garbage in, garbage out."

AI amplifies what already exists - it does not fix weak operations. AI can improve performance mainly by reducing variability. Meaning lowering waste, stabilizing production, and improving forecast accuracy. Without consistent execution standards and data accuracy, AI systems will rather amplify existing inefficiencies rather than help to correct them.

In practical terms, the question is not whether AI is powerful enough. The question is whether the operation is clear, disciplined, and transparent enough for AI to be useful.

Hotel chatbots are revolutionizing the way hospitality businesses connect with guests. Generative AI is already able to craft tailored itineraries in seconds, signaling big advancements for how the hotel industry approaches customer interactions.

While the big promises and hype of generative AI are focused on guest-facing tools, there is much to be said about the back-end efficiencies it can create.

In this article, we explore what hotel chatbots are, how they are changing the guest experience from booking to check-out, and some best practices for adopting these tools.

What Are Hotel Chatbots, and How Do They Work?

A hotel chatbot is a system driven by artificial intelligence (AI) that is designed to interact with guests or staff through natural conversation. There are several use cases for hotel chatbots throughout the guest journey, and they are often implemented with the aim of automating repetitive interactions to reduce pressure on staff and offer guests immediate support around the clock.

Typical tasks that a hotel chatbot can handle include:

Managing reservations and booking modifications

Answering FAQs about check-in, check-out, or amenities

Providing directions, restaurant suggestions, and local recommendations

Upselling room upgrades, packages, or services

Assisting with loyalty program queries and onboarding

Handling simple troubleshooting (e.g., Wi-Fi issues, password resets)

Collecting guest feedback through quick surveys.

The technology behind these systems varies. Some chatbots are based on simple scripts and are equipped to answer frequently asked questions or help guests with reservations with predefined responses.

More advanced models are based on natural language processing (NLP), which means that guests can go rogue with their queries, as the chatbot can pick up on more nuance in inputs. Here, the outputs can consider information outside a preset script and handle more complex tasks, such as offering tailored recommendations or troubleshooting booking issues.

Why Do Hotel Chatbots Matter?

With diverse applications, hotel chatbots are unlocking value for hospitality operators, especially when it comes to meeting guest expectations and operational efficiency.

Operational Efficiency

Hotel chatbots are able to perform many repetitive tasks, such as answering simple questions from guests, which results in improved operational efficiency. Much of the motivation to invest in AI tools such as NLP hotel chatbots comes precisely from the promise of being able to, through automation, either reduce the amount of staff hours in the name of cost savings, or to allow humans to handle more complex, higher-value tasks.

Labor shortages and a lack of skilled workforce are continuing challenges for the hotel sector that relies on delivering service quality to customers. Hotel chatbots are, therefore, not just a novelty, but can help ameliorate a structural issue that poses an economic risk to the sector.

Guest Experience

Interacting with conversational AI such as NLP chatbots is increasingly common in the booking phase, with 37% of travelers using AI tools such as ChatGPT to plan trips. The appeal is understandable, with AI being able to craft personalized itineraries in a matter of seconds in any language.

This shift has significant implications for hospitality operators from a guest experience point of view; travelers are expecting to see the same convenience and ease during their trip that AI can offer when booking their journey.

Rising guest expectation is often named as one of the most pressing challenges of the hospitality industry. Implementing hotel chatbots in a meaningful way is one way in which hoteliers can rise up to the challenge, offering seamlessness and personalization.

Guest Demand

Sure, guests want a seamless stay, but they surely want to still have humans handle tasks related to their stay? Not quite.

According to research conducted by Oracle, 73% of travelers say they are more likely to stay at a hotel offering self-service technology that minimizes contact with the staff and the other guests. Furthermore, 77% are interested in staying at a hotel that uses a chatbot to provide support for most customer service requests, whether it’s through a mobile device or kiosks.

While hotels cannot (and arguably should not) completely obliterate human staff members, as there is also a psychological component to human-tech interaction, there is clear demand from the guests’ side to have tech such as NLP hotel chatbots as the first touchpoint, with quick escalation to a human when needed.

Data Collection

Each time a guest interacts with a hotel chatbot, it creates a mini data point. Based on what guests ask about, such as amenities or room upgrades, the chatbot can discern preferences and demand patterns. Over time, these interactions create a rich dataset that can point hoteliers to insights on how they can refine their offerings and what future guests are likely to need.

Furthermore, chatbots can not only survey guests on their satisfaction levels but also have been shown to increase the amount of feedback that the hotel receives overall – an invaluable asset in itself.

In a nutshell, hotel chatbots have interesting implications for hotels, both for how they approach guests and vice versa. There is clear demand from guests for hotel chatbots to be a part of their stay, and hotels may be better positioned to deliver a consistent customer experience by adopting these tools.

How Are Hotels Using Chatbot Technology Today?

According to a report by Skift, more than half of surveyed hotel executives have already implemented or are experimenting with adopting automated messaging such as hotel chatbots to handle customer service requests, with another 22% considering investing in the next year.

With increased adoption, those not hopping on the bandwagon of hotel chatbots risk falling behind with higher operational costs compared to competitors and not offering instant responses for guests, which is becoming the norm. In other words, with more hoteliers adopting automated messaging, hotel chatbots may start to become a competitive necessity.

How Hotel Chatbots Pay Off

Why are so many hotels willing to invest in chatbot technology? Because when these solutions work, they can be very impactful. The return on investment of hotel chatbots shows up in both the bottom line and added revenue.

Streamlining Customer Service Brings Cost Savings

Customer service is an area where AI has already hit hard in hospitality and beyond – and no wonder. Research conducted on the customer support of a meal delivery company shows that customer service agents responsible for online chats are able to respond 22% faster when using AI-based suggestions.

Hotel groups are finding similar efficiency. Wyndham Hotels & Resorts, the largest hotel company in the world, uses hotel chatbots for managing its call center that handles questions from its franchise owners and helps problem-solve issues related to operations. Implementing chatbots has proven to be a significant value-add, with AI agents now handling almost 30% of all incoming calls.

While Wyndham’s call center of the future is not a guest-facing application of hotel chatbots, the benefits for businesses are transferable. Firstly, there is less pressure on staff as they are supported by AI. Secondly, fewer employees are needed to handle a greater number of contacts.

Added Revenue Through Smart Upselling and Direct Bookings

Another very discussed promise of hotel chatbots is their ability to bring in more revenue through upselling services and increasing direct bookings.

Upselling means offering guests a premium version of their booking (such as a room upgrade or added services) to enhance the guest experience and generate extra revenue for the hotel. Hotel chatbots can personalize offers of add-on services and upgrades based on guest preferences and past data. Some AI providers promise double-digit revenue growth for hotels implementing chatbots.

Hotel chatbots can also reduce reliance on online travel agencies (OTAs) for bookings. Customer acquisition through OTAs is very expensive for hotels due to high commissions. Again, hotel chatbot providers have reported that hotels can achieve a whopping 30% increase in direct bookings by implementing these solutions.

Challenges Hotels Face When Adopting Chatbots

Now we know that hotel chatbots are an increasingly important tool for hospitality businesses that can save costs and generate revenue. However, there are some challenges that hotels may face when looking to add chatbots to their strategic toolbox.

The most notable challenges are:

Integration with existing systems – Integrating chatbots with existing customer relationship systems (CRM) and property management systems (PMS) that hotels have in place is not always straightforward. The process of getting separate, often siloed legacy systems to communicate with each other may require significant resources or prove to be complex.

Data privacy concerns – More than a third of consumers are very concerned about how their personal information is handled in travel interactions. Chatbots that mishandle data risk regulatory issues and reputational harm to the hotel. While absolutely necessary, making sure the hotel chatbot system is aligned with data privacy and AI regulations can be time-consuming and requires scrutiny to be watertight in the long run.

Financial hesitation – Hotel chatbots come at many price points and can be a realistic investment even for small and medium-sized operators. That said, many operators remain hesitant, as the return on investment is not always immediate.

While these challenges are real, they are not insurmountable. Chatbot technology is still maturing, meaning that integration and compliance can improve in a way that makes adopting the technology less daunting for hoteliers.

Best Practices for Implementing Hotel Chatbots

Despite barriers, for many hoteliers, the question is changing from whether they should implement hotel chatbots or not to how soon they could do so effectively. To ensure that implementing a hotel chatbot solution solves a real operational challenge and brings about the desired results, here are some best practices hoteliers should keep in mind:

1. Start with a clear business challenge

Implementing tech for the sake of it rarely pays off. Start by identifying a gap in your operations that a hotel chatbot could naturally fill or a function that you want it to support the most. Having a clear goal in mind, such as to increase upselling or cut down the time spent on processing customer service queries, helps choose the right type of chatbot (for example, a simple scripted FAQ system versus a more advanced NLP hotel chatbot).

Pro Tip: Do not forget about employee-facing use cases. If your property does not want guests to interact with chatbots, you can still make it easier for your guest support team to do their work more efficiently. For example, consider an internal chatbot that gives reply suggestions to guest emails or queries at the front desk.

2. Design for the Guest First

A successful hotel chatbot enhances human hospitality instead of replacing it and should directly address guest needs. Consider a tool with multilingual support so that guests can interact in their native language and make it easy for them to escalate the interaction to a human agent whenever needed. Guests will be on board when the tools offer seamlessness and convenience.

3. Focus on Measurable Impact

Set up ways to track how the hotel chatbot is performing to see what kind of results it is delivering. Depending on where it is implemented, you could follow how often upsell offers are accepted, the number of bookings, and how guest satisfaction scores evolve. Reviewing interactions is also important to see where guests get stuck the most and abandon the conversation, so that the system can be fine-tuned to better serve its purpose.

The Future of Hotel Chatbots

Hotel chatbot systems are evolving very rapidly. With big players investing in borderline futuristic solutions, we can see glimpses of what it could mean for the industry.

The very next evolution is a large language model (LLM) concierge. LLM (of which ChatGPT, Gemini, and Claude are all examples) is a type of artificial intelligence that is trained with and can process huge amounts of data, giving it the ability to understand and generate human-like language.

Positioned as a concierge, an LLM hotel chatbot system could engage in a free-flowing conversation with guests and anticipate any needs they may have during the stay. With the advancements of agentic AI, the system could even act autonomously and complete tasks prompted by the guest.

Having fully digital staff members, however, is still futuristic. LLM-based tools have only gone mainstream after the launch of ChatGPT in 2022, and it is now being layered onto many previously NLP-based chatbots. Yet, building a custom GPT for hospitality requires serious investment, meaning that the early adopters will likely be the larger hotel groups of the world.

As chatbots evolve from simple script followers to AI concierges freely interacting with guests, their role in hospitality will only expand. Hotels that adopt these tools in a thoughtful way are positioned to gain in operational efficiency, revenue, and guest satisfaction. Hopefully, soon enough, with more widespread adoption, we will get even more information about the impact hotel chatbots are having on the properties employing them.

Hotel Subscriptions: Exploring Membership Models

We live in a subscription economy, with many of us paying recurring fees for entertainment (Netflix), for what we read (news outlets), and even for tracking our health (Oura ring). But what about subscribing to hotels?

We live in a subscription economy, with many of us paying recurring fees for entertainment (Netflix), for what we read (news outlets), and even for tracking our health (Oura ring). But what about subscribing to hotels?

This article explains what hotel subscriptions are, what different hotel subscription plans look like, and how (if at all) they differ from loyalty programs.

Title image brief: keycard and calendar, if possible, or even opening Netflix! (understandably, probably not possible). If not, concierge welcoming a guest

What are Hotel Subscriptions?

The global subscription economy market size has grown by more than 435% in the past decade. While subscription services are nothing new, the digital age and the shift towards an experience economy have made subscriptions an increasingly attractive business model – and interestingly, a highly underutilized one in the hospitality industry.

Hotel subscription plans are memberships guests can purchase, offering access, discounts, and more in exchange for a recurring fee, often monthly or annually. The origins of hotel subscriptions are often traced to the surge in remote workers, or ‘digital nomads’, a trend that accelerated in the aftermath of the pandemic.

Different hotel subscription plans include:

Access-based: guests pay monthly or annually for discounted rates or member pricing

Credit-based: guests receive a monthly credit towards stays in exchange for a recurring fee

Unlimited stays: guests pay a flat fee for unlimited nights

What makes subscription models so attractive is that they bring in predictable income for the business in question – an especially intriguing concept for hotel businesses, infamous for revenue fluctuations, whether the culprit is seasonality or geopolitical tensions. The recurring payments from a hotel subscription model can, in theory, ensure profitability.

How is a Hotel Subscription Pass Different from a Loyalty Program?

Both loyalty programs and subscription plans have the same aim, namely, to lock in repeat guest behavior and build direct relationships. Even the perks look similar, often including discounts and upgrades, which can make subscription plans look like loyalty programs with a price tag.

The key difference is that income from a hotel subscription pass is not use-based, but an upfront payment for access. Guests are essentially buying into a community or brand to gain long-term benefits and discounts, tying them in and making them more committed to using the benefits offered.

Put simply, loyalty programs reward past behavior, while subscriptions are a bet on future behavior. This flips the commitment dynamic, with the guest paying upfront and extracting value only over time.

Image brief: guest relaxing at hotel pool

Challenges of Hotel Subscriptions

Introducing hotel subscriptions does not come without its woes for brands. For instance, revenue management and capturing the right customer with the highest willingness to pay have to be weighed against the benefits of predictable revenue.

The same applies to the exclusivity of hotel subscription plans and the level at which they can be scaled before they begin to unravel.

Case Study on Inspirato

A commonly cited example in the domain of hotel subscriptions is the membership club Inspirato. The luxury travel subscription launched in 2019 with the concept of luxury travel for a monthly flat fee of $2500.

As for Inspirato’s business model, the company purchases unbooked inventory at partner hotels at much lower rates than those available to the average traveller. This way, they are able to remain profitable regardless of how much the member pays for the pass.

The hidden benefit for luxury hotels is that they can discount their inventory without publicly disclosing it, thereby avoiding a compromise of their premium positioning.

The only caveat for program members is that it requires flexibility. Availability is often communicated last minute, and members may have to keep their destination options open – a trade-off that many have found reasonable.

However, the more members a scheme like this attracts, the more it erodes its core value proposition: availability. Today, Inspirato has capped its member capacity at 2,500 in an effort to protect this exclusivity.

Yet other changes have affected the members' perceived value of the program – the annual price tag now sits at $40,000, and some bookings carry price premiums over open market rates, leading members to report finding better deals independently.

The Future of Hotel Subscriptions

Aside from services dedicated entirely to purchasing unbooked inventory and providing memberships, we also have global chains adopting the business model.

Accor launched its ALL PLUS subscription, which allows frequent travelers to buy into a specific membership card that grants free nights or discounts, valid across 30 brands and all tiers. As a global hotel company with thousands of properties, Accor can leverage its unsold inventory by directing it to guests tied to the subscription, while also generating recurring, predictable revenue.

For smaller or independent operators, however, the benefits of hotel subscriptions can be less straightforward. For example, Zoku and citizenM have both dabbled in subscription models, but both have moved away from offering unlimited or free nights in their subscriptions.

This is because unlimited stays wreak havoc on yield management. When a subscriber occupies a room that could sell at peak rates, the predictable subscription revenue can quickly become a liability in terms of profitability. Zoku’s offering is now solely tied to its co-working spaces, while the citizenM subscription offers a consistent discount on direct bookings.

In short, generating predictable income, utilizing unsold inventory, and encouraging loyalty in guests are great features of hotel subscriptions. That said, revenue management and exclusivity considerations can make hotel subscription plans an unviable route for many hoteliers.

For now, hotel subscriptions remain a niche play, but as guest expectations around flexibility evolve, the model may yet find its moment.
